What food reminds you of childhood?
Comfort food, like mac and cheese, beef gravy and mashed potatoes.
When did you first know you wanted to be a chef?
My uncle was a cook on a ship that went around the world. He used to
come visit us from faraway places and tell us about his adventures. That’s
when I thought life as a chef would be a fun way to see the world.
Who would you invite to your fantasy dinner party?
James Beard, Thomas Jefferson, and Marilyn Monroe.
What is your favorite foreign cuisine?
I love food so much that I couldn’t pick just one foreign cuisine,
although I really like Asian, Italian, and Indian.
What is always in your refrigerator at home?
Organic skim milk.
Who is your favorite television chef?
Geoff Janz, who had a television show in Australia. I used to tape it
every morning and watch it in the evening when I got home. I really like his
format and thought it was just a good show.
What is your most used cookbook?
The Chef’s Companion.
What would you have for your last meal?
Truffle Butter Glazed Lobster Tail.
What is your favorite kitchen gadget?
The mandoline.
Do you have a favorite indulgence?
Chocolate Molten Lava Cake — I had two on my birthday with vanilla bean
ice cream.
How does your personal taste influence the club menu?
I’m open to trying new things.
