What food reminds you of childhood?
My childhood was full of lasagna. Thanks, Mom!

Who influenced your decision to become a professional chef?
My mother. She’s an awesome cook.

Who would you invite to your fantasy dinner party?
Jim Brown, the pope, Luciano Pavarotti, and Julia Child.

What is your favorite foreign cuisine?
I really enjoy Thai food.

What is always in your refrigerator at home?
I always have milk, Little Debbie snacks, and Ben & Jerry’s.

What is your most used cookbook?
Mustards Grill Napa Valley Cookbook.

Who is your favorite television chef?
Martin Yan [of Yan Can Cook].

What is your favorite kitchen gadget?
My two hands — you can’t beat ’em.

What is your favorite food and wine pairing?
Chocolate and Cabernet.

What is your favorite food to cook at home?
Beef Stroganoff.

What do you think will be the next trend in fine cuisine?
Tapas-style portions.

What is the "go to" ingredient that you use time and time again?
Everything tastes better with garlic.

What is your comfort food?
Anything Italiano.

What is a cooking tip that most novices don’t know?
Try using carrots instead of sugar to sweeten your sauces. Never cook with wine that you wouldn’t drink.

When you’re not cooking, what are your favorite pastimes?
Sports, historical events, golf, and spending time with my family.
