LAST CALL Behind the bar: Stacie Burge Club: Rivers Club, Pittsburgh Bartending experience: 10-plus years A FEW TIDBITS FROM STACIE’S PERSPECTIVE. Why bartending? I like a challenge, and the bar is fast-paced. There is always something new to learn, and the variety of people you meet is always interesting. Essential qualities: A good bartender must have a sense of humor. Speed and strong organizational skills are a must. Did I mention a sense of humor? Next big thing: I have seen gin take a new role with the next generation of drinkers. Micro and specialty beers have also found a new place at the bar. Member favorites: We make a lot of the classic cocktails — Manhattans, gimlets, and old-fashioneds. They are almost as fun to make as to drink. Serving members: The best thing about bartending is the relationships you form with the members. You are there for all the major events in their lives. Unusual requests: Marriage would have to be one. But most of the time it is something strange like olives in a strawberry daiquiri. Fantasy drinking buddy: I would have to say Condoleezza Rice. She is a strong, intelligent woman. She always demonstrates grace under pressure — and she does it with a smile. SIGNATURE DRINK Pomegranate Martini Stacie says this drink is light and refreshing and “tastes good without tasting like it is all alcohol.” • 1-1⁄2 ounces Grey Goose Vodka • 1 ounce pomegranate liqueur • splash of triple sec Shake and pour into a martini glass.
